Here's the thing

I just recently was "Let go" due to sweeping management changes and lo and behold it might just be the best thing that ever happened to me. It was only two weeks ago that I was told by my doctor "Your job is killing you, find another job." Say it with a India accent and you can visualize my doctors serious brown eyes. At first I was a bit shocked I was let go, yet at the same time kinda expecting it.
What am I going to do?
First I decided that I needed to exercise, so I started walking 3 miles a day. I found a wonderful walking route. I leave my apartment, walk down the hill to some hidden stairs in the bushes, cut through a residential area, then cross over I5 by bridge and down another pathway to the greenbelt walkway along Willamette river. Today I saw a beaver , blue heron and two squirrels.
Thinking, thinking.......How can I work and be free? and still eat and sleep with a roof over my head. I have very little money, but maybe I could find a concession food trailer and build my own little food empire. I started cruising Craigslist and FOUND IT. a junky cheap food trailer. 8x10 trailer on wheels that I am go to transform into a great dining experience.
So this is what this blog is about MY DIARY ON CREATING A FOOD STAND. and boy do I need help.

It's great to see the opportunity in adversity; your such a great example of the positive outcome of being laid off! lol I can't wait to hear more from this new adventure, and I know you will have the BEST food!! Let me know when you find your spot! I am sure there will always be a line, or a group of people sitting under your awning :)

  5. I have complete faith in your ability to turn nothing into magic! My fondest memories of childhood are the amazing meals you created with little to no money. You were able to sustain a family of four and frequent visitors to the table such as myself and it always seemed effortless. Thank you for that and for being such a great "second" mom! I am behind you 100% and will do anything I can to further your efforts!

  6. I have complete faith in your ability to make this work. I can't count how many times I have witnessed you turn nothing into magic. If anyone can do it you can!! Thank you for all the wonderful meals you fed me during my formative years. I'm sure I would have been malnourished were it not for your considerable culinary talents!
